Golden Caramel Banana Bread

This twist on the classic banana bread uses Callebaut "Gold" chocolate chips to infuse the banana bread with rich and warming taste of caramel.

  • Heat oven to 180C/160C fan/gas 4
  • Butter a 2lb loaf tin and line the base and sides with baking parchment.
  • Cream together the softened butter and caster sugar until pale and fluffy, then slowly add 2 beaten large eggs with a little of the flour.
  • Fold in the remaining flour, baking powder, vanilla extract and the mashed bananas. Add the "gold" caramel chocolate and gently fold in. 
  • Pour the mixture into the tin and bake for about 50 mins, or until cooked through. Keep chcecking the loaf by testing it with a skewer as timings may vary.
  • Cool in the tin for 10 mins, then remove to a wire rack.

Notes

For extra caramel flavour, drizzle Colac salted caramel sauce over your loaf after cooling.
