Strawberry Surprise Cupcakes

Pretty, pink and super fun with a mouth-watering taste of sweet strawberry with every bite.

Ingredients
  

For the cupcakes:

For the buttercream and topping:

  • 145g butter (unsalted, softened)
  • 275g icing sugar (sifted)
  • 2 tbsp semi-skimmed milk
  • Strawberry Curls

Instructions
 

  • Line a muffin tray with cupcake cases and pre-heat your oven to 180C/160C fan/gas 4 
  • Beat together the caster sugar and the butter
  • Add the eggs and 1/2 teaspoon of Vanilla Extract and continue to mix
  • Fold in the self-raising flour, and whisk until fully combined
  • Add in the Strawberry Pieces and mix well until evenly distributed within the mixture
  • Drop a tablespoon of mixture into each of the cupcake cases and continue this method for all of the mixture, distributing amongst the cases evenly
  • Bake in the oven for 12-15 minutes until golden brown - insert a skewer through the middle of the cupcake to check; it should come out clean!
  • Place on a wire rack and leave to cool completely

For the buttercream and topping:

  • Whisk the butter until smooth in consistency
  • Add in the icing sugar slowly, and beat with the butter until fully combined
  • Add food colouring here for a burst of colour! (Optional!)
  • Place the mixture into a piping bag (or, use a sandwich bag with the corner cut off), and carefully pipe the buttercream onto each of the cupcakes in a swirl motion
  • Gently top each cupcake with a sprinkling of Strawberry Curls, and enjoy!

Notes

TOP TIP:  to add an extra tartness to your cupcakes, try decorating with a Freeze-Dried Strawberry half on each cake!
