Tropical White Chocolate Cheesecake

Mangoes, papayas, pineapples and passionfruit juice combine with buttery white chocolate to create this tropical cheesecake. Perfect for summer bbqs!
Servings 8


Biscuit Base

  • 220 g Digestive Biscuits
  • 75 g Melted Butter
  • Zest of 1 Lime

Cheesecake Mix


Biscuit Base

  • Line the base of an 8" round tin with baking parchment
  • Crush the digestive biscuits into crumbs
  • Add in the melted butter and lime zest and combine
  • Press the mixture into the base of the tin and place in the fridge to set

Cheesecake Mixture

  • Whip the double cream into soft peaks
  • Mix all the other ingredients cheesecake ingredients together in another bowl
  • Fold the double cream into the cheesecake mix
  • Scoop the mix onto the biscuit base and use the back of a spoon to create a smooth, even surface


  • Drizzle the cake with the passion fruit topping sauce
